Ham and Pineapple Couscous Salad

Toss buttered and seasoned couscous with cubes of ham, pineapple chunks, sweet red onions and green peas. Serve with a tangy dressing of pineapple juice and Dijon-style mustard for a light, refreshing salad. 

Fresh Cranberry Salad

A sweet, sweet cranberry salad that everyone will think is dessert. Sugared cranberries are combined with crushed pineapple and miniature marshmallows and chilled overnight. Just before serving, this lovely concoction is folded into freshly whipped cream and sliced bananas. Serves six.

Roasted Rack of Lamb

A rack of lamb is seared, and encrusted with Dijon mustard and garlic and rosemary flavored bread crumbs. Then it is roasted to your desired doneness.

This spinach salad is adorned with blue cheese, avocado, and cranberries, then drizzled with a raspberry walnut vinaigrette. 

White Chocolate Cheesecake with White Chocolate Brandy Sauce

This is a dense cheesecake that is very smooth and melts in your mouth. The white chocolate brandy sauce tops it off. Just spoon it over the center of the slice of cheesecake on the plate. Garnish it with mint leaves and either raspberries or strawberries.
