Chicken and Stuffing Casserole

This was okay. I sauted chopped boneless chicken cutlets in 1 tbls. olive oil with 1 small chopped onion, 2 cloves minced garlic and black pepper.This recipe calls for 8 oz. of dry bread stuffing. This does not mean 1 cup. It means 8 oz. net weight, which is a little more than 1/2 of a 15 oz. bag. I didn't have any problems with it being soupy, as others did. This is a good way to use leftover chicken.

Chicken Scampi II

I used thin sliced chicken cutlets and cooked it on low and the garlic still burned. If you decide to use fresh herbs, you need to put them in a lot later or else they will burn too. Not bad, but not great either.

Braised Balsamic Chicken

Fiance said this smelled a lot better than it tasted. Weird sweet/sour thing going on. I used fresh garlic instead of garlic salt and fresh chopped tomatoes and basil. Not going into the normal rotation.
