Mediterranean Lemon Chicken

Reviewed on Aug. 27, 2008 by ANJACKSON
Very yummy indeed! Didn't change a thing except that I used skinless bone in chicken breasts. Turned out nice and moist and loved all of the flavours mixed together! I did let my chicken sit in the mixture for about an hour before baking them, only because I was waiting for hubby to be on his way home. Thanks for the quick but delicious recipe!

Blueberry Coffee Cake

Reviewed on Aug. 26, 2008 by ANJACKSON
GREAT! Made this over the weekend to take up to the cottage. Used more blueberries (about 1 1/2 cups) and used brown sugar instead of white for my topping. I also used half an 8oz pkg of light cream cheese although I personally didn't find that the cream cheese necessarily added much in terms to the flavour of the coffee cake. There just ended up being 'small chunks' of cream cheese throughout. Perhaps beating it with the butter/sugar and incorporating that way might lend more of the cheese flavour to the cake. Nonetheless, it was fantastic and enjoyed by all!

Baked Teriyaki Chicken

Reviewed on Aug. 21, 2008 by ANJACKSON
SO YUMMY!! Made these the other night using bonless, skinless thighs. Used full amount of sauce even though I only had 7 thighs. Also used fresh minced ginger and used all brown sugar (about 1/3 cup unpacked). These were great! I lined my dish with foil (great tip!) and cooked covered at 400 for about 30mins and then uncovered for about 10 - flipping and basting occasionally throughout, yum! Next time need to make sure I have rice or something to use up the yummy sauce!
