Canada

Ranging from the Atlantic to Pacific Oceans and northward well above the Arctic Circle to the Arctic Ocean, Canada is the world’s second largest country. Yet its population density of 9 people per square mile is one of the lowest. The great majority of its population dwells in the lower latitudes in the major cities just above the United States. Canada is made up of 10 provinces and three territories. Though the country’s political and culinary existence has been influenced largely by Native, English, and French cultures, a steady flow of immigration from all points of the globe continues to broaden Canada’s culinary landscape. Canada is well known for its natural bounty: berries, salmon, wild rice, fiddlehead ferns, wild mushrooms, caribou, and of course maple syrup. More than 80 percent of the world’s maple syrup comes from Canada. Canada’s wine industry is coming on strong in British Columbia and Ontario. Curiously, Canadians eat more donuts than any other nation on earth. With more doughnut shops per capita than anywhere, it’s not surprising that Canadians are also big coffee drinkers.

Olive Oil Roasted Eggplant with Lemon

I found this recipe to be not very good at all. The taste of the olive oil was overpowering and it just wasn't the right flavor for the eggplant.

Bean Soup With Kale

Okay, I've made a lot of soup recipes from this site, as well as kale recipes too. I think this one can easily top them in both categories. I had fresh onions, kale, and parsley from my mom's garden so I decided to whip it up. I halved the recipe but kept the broth the same. It was the easiest, simplest and healthiest soup I've ever had! The kale tasted amazing!!!! It wasn't tough or rubbery. The only thing I did was to cook it for longer (about 1.5 hours on low). I like my soups to be cooked slow and simmering. Will keep making over and over.

Scalloped Sweet Potatoes and Apples

This was SO yummy. It's a great way to serve yams in a different way. I only used 2 TBSP of brown sugar and used cinnamon b/c I don't like mace. The apples I used (GALA) are already sweet so you don't need to add more sweetness. It was so easy to make. There was nothing left after the potluck. I'm going to make this for Thanksgiving.
